Lemon Sole Filet Roll Ups

This recipe from Barefoot In Boston has become a regular in our kitchen. It super easy and really quick to whip up last minute. MFB and I are OBSESSED with brussel sprouts (we like ours a little burnt and crispy), so I chose that for a side along with some rice pilaf. Here is what I did:
 Chopped up the sprouts:
 Put the rice on the stove:
 Rinsed off the fish:
I rolled up the filets with lemon, butter, parsley, pepper and salt and baked for 15 minutes at 365. I cooked the sprouts on medium heat for about 10 minutes with olive oil, salt and pepper. This is a great recipe to try if you aren't too confident around the kitchen. Once you get the hang of it you can try experimenting with different herbs and seasoning. Enjoy!
